Jim and Rachel’s first date was to a cooking class at the Wallace Center in Des Moines. On May 1st, 2018, they decided to host another cooking class there and invited family and friends to join. Jim’s second cousin is the chef and led their class. After dinner, Jim made a reference to his favorite Marvel movie, sharing that he had an infinity stone for Rachel as well. Little did she know, it’d be the best stone yet! Jim proposed and they celebrated the rest of the evening with family and friends.
Jim and Rachel met on online! They had quite a few mutual Facebook friends so they were surprised their paths hadn’t crossed before. They even attended Iowa State at the same time. Jim messaged Rachel on the dating app and after exchanging a few messages, he asked if she wanted to go to a cooking class with him at the Wallace Center. Jim figured since she was a dietitian, she’d like to cook. He was right! She gladly accepted and told him she was in Central Iowa for work (the app matches based on distance) and she actually lived in Iowa City. A few days went by and Rachel didn’t hear anything from Jim. She figured he wasn’t interested and she unmatched him on the app. Several days later, she was on Facebook and saw she had a message from him. He apologized for not messaging back sooner. He’d been busy with choir preparation for Easter. Rachel gave him her number, they went to that cooking class and rest is history!

In their spare time, they enjoy cooking, walking on nature trails, fishing, snuggle time, traveling, and boating.
They both attended Iowa State but Jim is from Buckeye while Rachel grew up outside of Iowa City and attended West Branch High School.
“Jim is very logical and is constantly planning (trips) and researching gadgets (tech items, camping tools, fishing gear, etc.) He is very social and enjoys getting outside. He has a great sense of humor!” – Rachel
Jim is a Professional Engineer focusing on structural and hydrological design. Rachel is a registered dietitian with Iowa State University Extension and Outreach. She provides nutrition and wellness education with adults in the areas of food safety, food preservation, and child care nutrition.
On their wedding day, Jim is most looking forward to their “…strong Lutheran wedding, and the dancing after.” While Rachel is looking forward to “…all the personal touches we have incorporated into the day – we are getting married at the church where my parents were married and was built with the help of my ancestors when they immigrated from Ireland.”
